Semolina is very confusing, as the same word is used to refer to a number of quite different things. In the UK it generally refers to a yellow, slightly grainy flour made from durum wheat, which is primarily used for making a simple but tasty milk pudding. It is not usually considered to be suitable for making bread, except when added as a small proportion of the total flour. But as you will see below, I have found that you can make beautiful bread using as much as 75% pudding semolina. It makes a lovely bread, with a primrose yellow crumb, a crunchy crust and a distinctive flavour. Continue reading →

This is my take on two recipes from Richard Bertinet’s Dough that I’ve had my eye on for some time. I decided to kill two birds with one stone and make them both from the same batch of dough, which necessitated some adjustment to the recipes. His Honey and Lavender Loaf is made with a brown dough and is very big; mine is half the size and uses a rye dough. His Caraway and Raisin Bread does not contain any honey, but I thought it would not be ruined if it did. Continue reading →

I have been baking bread on and off since I was a teenager, but it was only in the last six months that two things happened that revolutionised my bread making. The first was buying a plastic scraper (or two actually). Far more radical was buying a copy of Richard Bertinet’s Dough. This has completely transformed the way I make bread, and has made me into a breadmaking fanatic, whose weekends don’t seem complete unless some new challenge is underway. Continue reading →
